Best Easy & Moist Coffee Cake Recipe

easy coffee cake recipe with glaze
Streusel Topping
 ¾ cup flour
 ½ cup brown sugar
 2 tsp ground cinnamon
 ⅛ tsp salt
 5 tbsp butter (melted)
Brown Sugar & Cinnamon Layer
 ⅓ cup brown sugar
 1 tsp ground cinnamon
Coffee Cake
 ⅔ cup vegetable oil
 1 tsp vanilla extract or vanilla flavoring
 1 egg
 ½ cup whole milk
 ⅓ cup granulated sugar
 1 ½ cups flour
 1 ½ tsp baking powder
 ¼ tsp salt
Glaze
 1 cup powdered sugar
 3 tbsp milk
 1 tsp vanilla extract
Instructions:

Preheat oven to 350°F and grease a 8x8 square inch metal pan. If you are using a glass baking dish, please make note of the extended baking time in Step 10.

Streusel Topping:

Start by making the streusel topping to allow the butter enough time to cool. Melt the butter in the microwave, and set aside while you combine the rest of the streusel ingredients in a separate bowl (flour, brown sugar, cinnamon and salt). Then, pour the cooled butter on top of the dry ingredients. Stir until combined. You should see small pea-sized balls starting to form. Set aside. This is your streusel topping.

Cinnamon & Brown Sugar Layer (Optional):

In a small bowl, combine 1/3 cup of brown sugar and 1 tsp of cinnamon. Set aside. This is your cinnamon and brown sugar layer.

Coffee Cake:

In another small bowl combine the oil, egg, vanilla, and milk together. Stir until thoroughly mixed. This is part 1 of your cake mixture.

In a large bowl, combine the rest of coffee cake ingredients (flour, granulated sugar, baking powder, and salt). This is part 2 of your cake mixture.

Pour the egg & oil mixture (from Step 4) into the dry ingredients bowl (from Step 5). Mix together well. This is your final cake batter mixture.

Spread half of the cake batter mixture onto the bottom of your prepared pan. The batter will be very thick, but still spreadable. Spread it out as evenly as possible with a spoon so that it nearly covers the bottom of the pan. It's okay that it's a very thin layer of batter or if it doesn't cover the bottom totally, as it will get filled in later with the rest of the batter.

Sprinkle the brown sugar and cinnamon mixture (that you prepared in Step 3) over the first layer of the cake batter in the pan. Note: You can skip this step for a lighter version of this recipe.

Pour the rest of the batter on top of the brown sugar layer, and spread it out evenly. Sprinkle the streusel layer evenly on top of the second cake batter layer.

For a standard metal baking pan, bake for 18 to 20 minutes or until a toothpick comes out clean. If using a glass baking dish, bake for 30 to 35 minutes or until a knife comes out clean. Let cool.

Glaze:

Once the cake is completely cool, combine the powdered sugar, vanilla, and the milk until a thick glaze forms. Drizzle the glaze over the cooled coffee cake and serve.

Best Affogato Recipe

Ingredients:
2 shots of espresso
½ cup vanilla bean ice cream
Salted brownies for garnish (optional)
Chocolate shavings (optional)

Instructions: 
1. Scoop vanilla bean ice cream into a 4 ounce glass and place in freezer while you prepare the espresso.

2. Pull the espresso shots. Immediately, pull glasses of ice cream out and pour the espresso over the ice cream.

3. Sprinkle with chocolate shavings and salted brownie crumbs. Garnish the glass's rim with a one-inch square of salted brownies.

Iced Oat Milk Pumpkin Spice Latte Recipe

Pumpkin spice mixture:
½ cup oat milk (barista blend if possible)
⅓ cup brown sugar (white is okay too)
2 tsp pumpkin puree
1 tsp pumpkin pie spice 
1 tsp vanilla extract
Latte
2 shots of espresso
1 cup oat milk 
1 tbsp pumpkin spice mixture
½ cup whipped cream (optional)
2 ice cubes (if enjoying cold)

Pumpkin spice mixture:
1. In a small sauce pan, add oat milk, sugar, pumpkin puree, and pumpkin pie spice. Bring to medium heat and whisk ingredients together until sugar is dissolved. Do not let it boil.
2. Once the mixture starts to steam and the sugar is completely dissolved, remove the pan from heat and stir in the vanilla. Strain through a fine mesh filter into a glass jar for easy storage.
Latte:
3. Pull your espresso shots, and pour inside your desired coffee mug. Add the strained pumpkin spice mixture to the espresso and stir well.
4. If enjoying warm (skip to next step if enjoying iced), steam your milk using a steam wand, milk frother, or mason jar (see post above to make foam without a frother) until foamy. Pour velvety milk on top of the espresso mixture.
5. For iced pumpkin spice lattes, add 2 to 3 ice cubes or cold brew coffee cubes to your mixture.
6. Top with whipped cream, if desired, and dust with pumpkin pie spice. Enjoy!
