Use a medium heat for the syrup mixture.
When you boil the sugar, cinnamon, and water on the stove, use a medium heat.
The mixture should start to boil after about a minute or two since it’s such a small batch. Let it continue to boil at medium heat for about two to three minutes, or until it starts to thicken. It won’t thicken very much, but will have a syrup-like texture.
You’ll only use some of the syrup mixture.
This recipe may be Starbucks-inspired, but it’s certainly not as sweet as the OG. I’m not a huge fan of sugary drinks, so I don’t use quite as much syrup as Starbucks.
If you use just about 1 tablespoon (or less if you prefer) of the yield in the below recipe, it still tastes just as yummy.
Serve in a high ball glass to take the presentation to the next level.
I got a little creative with this drink and put it in a high ball glass to make it look fancy. There’s no alcohol, but it elevates the presentation.
Also, instead of adding whipped cream, I sprinkled a few coconut shreds on top with a couple of cinnamon sticks. You can also put a cinnamon stick or two in the final drink for an extra kick.
After all, cinnamon does have a number of wonderful health benefits.

To make the cinnamon dulce syrup, combine the brown sugar, cinnamon and water in a small saucepan on the stove. Bring to a boil and let it continue to boil for 2 to 3 minutes. You know it's ready when the sugar is completely dissolved and it starts to take on a syrup-like texture. Set aside.
Combine espresso, milk, and only 1 tablespoon of cinnamon dulce syrup. The rest you can save in the refrigerator for another time!
Add 2 to 3 ice cubes to finish it off, and top with whipped cream & a light dusting of cinnamon. Enjoy!
